Just Mix and Bake!
Making this cinnamon roll cake recipe is simple!! Yes – there is lots of butter, but that’s why it is so stinking delicious!
PREP.Preheat the oven to 350°F. Grease a 9-x-13-inch baking dish.
BATTER.In a large bowl, mix flour, sugar, baking powder, salt, milk, eggs, and vanilla together.
Slowly stir in melted butter and pour batter into the prepared baking dish.
CINNAMON TOPPING.In another bowl, mix softened butter, brown sugar, flour, and cinnamon. Dollop over the top of the cake mixture evenly.
Swirl your topping and cake mixture with a knife, only inserting it halfway into the cake batter and going up and down the length of the pan.
BAKE.Bake for 28–32 minutes.

Cinnamon swirl cake is easy and can be modified to your particular taste.
Elevation.If you live at a higher elevation it might take longer for the cake to fully bake. If the top is browning before the cake is fully baked, go ahead and place a tented piece of tin foil on the dish for the remainder of the time.
Do not overmix.If you over-mix the cinnamon swirls it may take longer for the cake portion to fully bake.
The recipe is so easy to whip up I just mix the ingredients using two bowls and a whisk. However, you can use a stand mixer with the paddle attachment or a hand-held electric mixer if you wish.

Storing Info
STORE.Allow homemade cinnamon roll cake to cool before covering it with foil or saran wrap and leaving it on the counter before reheating. If you are making it ahead of time, I recommend serving it within 24 hours but leftovers will keep for 3-4 days.
FREEZE.Let the easy cinnamon roll cake recipe cool and cover it tightly in plastic wrap and again with aluminum foil. It will keep in the freezer for up to 3 months. You can reheat pieces in the microwave or the whole pan at a low temp in the oven.

When I bake this cake I use a glass or ceramic baking dish at 350°F for about 30 minutes. If you use a metal baking pan, which bakes more quickly than glass or ceramic, you will need to shorten the baking time and possibly increase the oven temperature by 25 degrees.
Most grocery stores carry gluten-free baking flour which can be used as a 1:1 substitute in this recipe. Note that using gluten-free flour helps those with a gluten allergy, but does not make this recipe keto friendly.

I grew up with a coffee cake much like this one, and I had forgotten all about it until I ran across this one while looking at various breakfast/dessert recipes. My mothers recipe started with a box mix but I think your recipe will hold up better then a cake mix. On the cake mix recipe a lot of the cinnamon mixture sunk to the bottom instead of being feathered through the cake. Can’t wait to try this and add new memories.
